Ingredients: Full leaf Pai Mu Tan tea
With a nod to the Chinese legend of those first tea leaves drifting into Emperor Shen Nung's pot of boiling water, the minimal processing of this Pai Mu Tan preserves the leaves’ natural floral and fruity character.
Make sure to steep at a cooler temperature (around 175°-185° F) to bring out all of this tea’s wonderful complexities.
Iced Tea Directions: This tea is fantastic iced! You can prepare it either by hot steeping or cold brewing—which is our favorite, but either is great.
Hot Steep:
Single cup (16 oz): 2 Tbsp dry tea. Steep for 4 min in 6 oz of 195 degrees water. Pour over ice.
½ Gallon (2 ltr): 2/3rds cups dry tea (0.50 oz/ 15 gr). Steep covered for 4 min. in about 3 cups 195 degree water. Sweeten if desired, then strain and bring up to ½ gal. with water and ice.
½ Gallon Cold Brew:
Stir ¾ cup dry tea (0.60 oz/17 gr) into 1/2 gal. cool water. Cover and leave in fridge 6-8 hours or overnight. When ready, pour through a strainer and top water off to bring back to ½ gallon.
