Lavender Basil Iced Matcha
Matcha latte is a magical drink that pairs well with many creative flavors. When we were developing this recipe, we sought to find flavors that complemented and celebrated our matcha's beautiful tasting notes and character. We found that just the right amount of lavender and basil does just that!
A Lavender Basil Iced Matcha latte is perfect for sunny days and days you wish were brighter. This lovely drink is an ongoing huge hit at our stand at the Cobblestone Farmer’s Market, and we hope that you fall in love with it as much as we have.
This recipe yields about 20 oz of simple syrup. We recommend using about 2 Tbsp for a 16 oz. glass of iced matcha. Use 13.5 oz to make a gallon.
LAVENDER + BASIL simple syrup
Ingredients
2 cups sugar
2 cups water
2 tbps dry lavender
1/4 cup fresh basil, packed tightly (about 0.5 oz)
Directions
Put basil and 1/2 cup of the water in a food processor and run on high for 30 sec.
Combine basil puree, lavender, the remaining water, and sugar in a saucepan and bring to a boil, stirring until the sugar is dissolved.
Remove from heat and steep covered for 25 min.
Strain, pressing gently then refrigerate.
