Lavender Basil Iced Matcha
Matcha latte is a magical drink that pairs well with many creative flavors. When we were developing this recipe, we sought to find flavors that complemented and celebrated our matcha's beautiful tasting notes and character, and found that just the right amount of lavender and basil do just that! Perfect for bright sunny days - and even for days when you wish it were bright and sunny. An ongoing huge hit at our stand at the Cobblestone Farmer’s Market, we hope that you fall in love with this drink as much as we have.
This recipe yields about 20 oz. of simple syrup. We recommend using about 2 Tbsp for a 16 oz. glass of iced matcha. Use 13.5 oz for an entire gallon.
LAVENDER + BASIL simple syrup
Ingredients
2 cups sugar
2 cups water
2 tablespoons dry lavender
1/4 cup fresh basil, packed tightly (about 0.5 oz)
Directions
Put basil and 1/2 cup of the water in a food processor and run on high for 30 sec.
Combine basil puree, lavender, the remaining water, and sugar in a saucepan and bring to a boil, stirring until the sugar is dissolved.
Remove from heat and steep covered for 25 min.
Strain, pressing gently. Refrigerate.
